Maple-Bacon Long John Cake

Ingredients

Candied Bacon

cup packed brown sugar

box (16.3 oz) Betty Crocker™ Krispy Kreme Doughnuts™ cake mix
Water, vegetable oil and eggs called for on cake mix box

teaspoon maple extract

Glaze

Glaze pouch from cake mix box

teaspoon vanilla

teaspoon maple extract

    Heat oven to 350°F. Line 15x10x1-inch cookie sheet with sides with foil.

    In large resealable food-storage plastic bag, place separated bacon slices and brown sugar. Seal bag, and shake to coat bacon. Place coated bacon in single layer on cookie sheet. Sprinkle leftover brown sugar on top of bacon. Bake 10 minutes; carefully turn bacon slices over, and continue to bake 15 to 20 minutes or until bacon is cooked through. Remove from pan to cooling rack; cool completely.

    Grease 9x5-inch loaf pan with shortening; lightly flour. In large bowl, make cake batter as directed on box. Beat in 1 teaspoon maple extract. Bake as directed. Cool in pan 10 minutes; remove from pan. Cool completely, about 45 minutes.

    Squeeze and cut Glaze pouch as directed on box. In small bowl, mix contents from Glaze pouch, vanilla and 1/2 teaspoon maple extract with spoon until well blended. Spread or drizzle over top of loaf. Chop bacon into small pieces; sprinkle on top of glazed loaf. Store loosely covered at room temperature.

  • Long John doughnuts typically are rectangular in shape, unfilled and topped with a glaze.
  • For a quick topping, instead of candied bacon, try purchased candied nuts for a sweet, nutty crunch!
  • For best results in cutting the cake, use a long thin-bladed knife instead of a serrated knife for clean slices.
