1Heat oven to 400°F. Spray 12 regular-size muffin cups with cooking spray.
2In large bowl, stir together Bisquick mix and sugar; stir in nuts. Make well in center of mixture. In small bowl, mix half-and-half, oil, vanilla and egg; add to dry ingredients, stirring just until moistened. Divide batter evenly among muffin cups, filling two-thirds full.
3Bake 11 to 12 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan to cooling rack.
