Loaded Crunchy Taco Skillet

This skillet Mexican dish is easy to prepare and sure to be a hit with the family. MORE + LESS -

Ingredients

lb lean (at least 80%) ground beef

cups hot water

box Hamburger Helper™ crunchy taco
1
cup milk

cup frozen whole kernel corn
1
can (4.5 oz) Old El Paso™ chopped green chiles
1/4
teaspoon crushed red pepper flakes
1/2
cup sour cream
2
tablespoons milk
1
large tomato, chopped
2
tablespoons chopped fresh cilantro leaves

    In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown. Add hot water and sauce mix (from Hamburger Helper™ box); stir to combine. Stir in 1 cup milk, uncooked rice (from Hamburger Helper™ box), frozen corn, green chiles and pepper flakes. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer about 20 minutes, stirring frequently, until rice is tender. Remove from heat.

    Meanwhile, in small bowl, stir topping mix (from Hamburger Helper™ box), sour cream and 2 tablespoons milk; mix well.

    Spoon sour cream topping mixture over beef and rice mixture. Top with tomato, cilantro and corn chips (from Hamburger Helper™ box).

Expert Tips

  • Add a little more heat – replace the canned green chiles with canned sliced jalapeño chiles.
  • Don’t have frozen corn? Use 1 cup canned corn, drained.
