1Heat waffle maker; grease with vegetable oil or shortening. In large bowl, stir together Bisquick mix, egg, milk, lemon peel, lemon juice, 2 tablespoons oil and the granulated sugar until smooth.
2Pour batter onto center of hot waffle maker. (Check manufacturer’s directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
3To serve, place each waffle on a plate; spread with 1 tablespoon lemon curd. Sprinkle berries evenly on half of each waffle; fold other half of waffle over berries. Sprinkle with powdered sugar.
