Cute individual desserts are quick to make, using refrigerated pie crust. When you want just a little sweet, they’re the ticket! ...MORE+ LESS-

Ingredients

cup milk
1
box (4-serving size) lemon instant pudding and pie filling mix
1
teaspoon grated lemon peel
1
crust from 1 box Pillsbury™ refrigerated pie crusts
Strawberry halves, lemon slices or other fresh fruit
Fresh mint leaves

    In medium bowl, beat milk and pudding mix 2 minutes with electric mixer at medium speed or 2 to 3 minutes with wire whisk until well blended. Stir in lemon peel. Refrigerate.

    Allow 1 pie crust pouch to stand at room temperature 15 to 20 minutes. (Refrigerate remaining crust for another use.)

    Heat oven to 450°F. Remove pie crust from pouch. Using rolling pin, roll crust to 15-inch diameter. With lightly floured 3-inch round cutter, cut 16 rounds from crust; discard scraps. Fit rounds into 16 (2 3/4-inch) ungreased muffin cups, pressing in gently. Generously prick crusts with fork. Bake 5 to 7 minutes or until very light golden brown. Remove from pan; cool completely.

    Spoon lemon filling into tart shells. Garnish with sliced fruit and mint leaves. If desired, sprinkle with powdered sugar.

Expert Tips

  • Turn these into banana cream tarts by using banana instant pudding and pie filling mix and sliced bananas.
  • Bake and freeze the crusts up to 3 months ahead.

    Channel your dream for Florida sunshine by gathering your pals for a citrus-themed bash! What a great way to brighten the mood in these dreary months. After all, when life gives you lemons… throw a party!

    Citrus fruits work well for both food and décor, so this theme is a snap. Take a  quick trip to the produce section of the grocery store, load up on lemons, limes and oranges, and you are ready to go!

    Get “Spring-y” With It

    Use bright citrus colors as your palette, and place them anywhere and everywhere you can to brighten your space. Napkins and placemats are a great place to start. Want a  cheater’s trick? I used 12x12 inch pieces of scrapbook paper for placemats on this table! Your color options are endless.

    A citrus centerpiece is easy to put together. Combine bowls of oranges, lemons, or limes with a few flowers. Or use sliced fruit to line a pretty vase of flowers.

    Consider hanging tissue pom-poms or paper lanterns also. Your colorful table will lift everyone’s spirits immediately!

    The Eats

    For appetizers, a crudités tray with some fun dips is a great start to the feast.

    Some lemon-y salad for sides:

    All of these salads use ingredients that are readily available in the winter. Your guests will appreciate fresh, seasonal ingredients.

    Serve with some crusty bread, and you’ve got a delicious meal!

    Don’t forget the drinks! White Wine Sangria is one of my favorites! Add lots of orange, lemon, and lime slices for color and flavor.

    The Treats

    I love these individual Lemon Mini Tarts (recipe below)! If you use Pillsbury refrigerated pie crust, they’re very simple to put together. Plus the individual sizes are just too cute at each place setting!

    Lemon Burst Cupcakes are another favorite dessert of mine. These Lemon Burst cupcakes are delicious. For an extra citrus-y touch, top them with some fruity Trix Cereal to match your colorful table!

    Don’t forget to send your guests away with a little thank you. Chex Lemon Buddies are perfect! Make a large batch ahead of time and package them in small bags tied with a yellow ribbon.  They will be a burst of sunshine for your guests to take home with them.
