Lemon-Garlic Broccoli with Yellow Peppers

Ingredients

  • 4 cups fresh broccoli florets (about 10 oz)
  • 1/2 cup bite-size strips yellow bell pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 1 tablespoon water
  • 1 teaspoon grated lemon peel
  • 1/4 teaspoon salt

    In 3-quart saucepan, heat 4 cups water to boiling. Add broccoli; heat to boiling. Boil uncovered 2 minutes.

    Add bell pepper; boil 1 to 2 minutes or until vegetables are crisp-tender. Drain; remove from saucepan.

    To same saucepan, add oil and garlic. Cook over medium heat, stirring occasionally, until golden. Stir in 1 tablespoon water, the lemon peel and salt. Return broccoli mixture to saucepan; toss to coat.

  • Broccoli is a cruciferous vegetable that, like cabbage, Brussels sprouts and cauliflower, is thought to protect against disease, especially certain types of cancer.
