Layered Barbecue Chicken Grain Salad

Ingredients

box Betty Crocker™ Suddenly Grain Salad™ southwest grains

tablespoon olive oil

tablespoon water

cups chopped cooked boneless skinless chicken breast

cup barbecue sauce
1/2
cup shredded Cheddar cheese (2 oz)
1/2
large avocado, chopped

tablespoons sliced fresh jalapeño chile

cup crushed tortilla chips

    Fill 3-quart saucepan half full with water; heat to boiling. Carefully place unopened bag of grains (from salad box) in water. Gently boil uncovered 17 minutes, turning bag once.

    Meanwhile, in large bowl, stir together dressing mix (from salad box), oil and water. Set aside. In small bowl, stir together chicken and barbecue sauce.

    Place unopened bag of cooked grains into colander. Rinse bag with warm water; drain.

    Open bag of grains. Add grains to dressing; toss to coat. To serve, place grain salad in serving bowls. Top each bowl evenly with chicken, Cheddar cheese, avocado, jalapeño and tortilla chips. Serve immediately.

Expert Tips

  • Making this ahead of time? Prepare all ingredients, and store in separate airtight containers in refrigerator until ready to serve.
  • This recipe can easily be doubled. Use a 4- or 5-quart saucepan to cook both bags of grains at the same time.
