With crisp cereal squares, pretzels, crackers and roasted soy nuts, crunchy snack mix gets zest from Italian seasoning and balsamic vinegar.

Ingredients

  • 3 cups Wheat Chex™ cereal
  • 3 cups Rice Chex™ cereal
  • 1 cup pretzel nuggets
  • 2 cups small cheese-flavor crackers
  • 1 cup salted roasted soy nuts
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 2 teaspoons garlic salt
  • 3 teaspoons Italian seasoning
  • 1/3 cup grated Parmesan cheese

    Heat oven to 300°F. In large bowl, mix cereals, pretzels, crackers and soy nuts.

    In small bowl, mix oil, vinegar, garlic salt and Italian seasoning. Pour over cereal mixture, stirring to coat. Spread in ungreased 15x10x1-inch pan.

    Bake about 30 minutes, stirring twice, until toasted. Sprinkle with cheese; toss to coat. Cool completely, about 45 minutes. (Cereal will crisp as it cools.) Store in airtight container.

    In place of the Italian seasoning, you can use 1 1/2 teaspoons each of dried basil leaves and dried oregano leaves.

    Look for soy nuts with the other snack nuts or by the healthy snacks. The pretzel nuggets are available in several flavors. Choose your favorite.
