Ham and Cheese Tortilla Roll-Ups (lighter recipe)

You have ever-so-easy Southwest flavor going when you make a creamy cheese and corn filling that you wrap up with ham slices and flour tortillas. Plus, this recipe uses lower-fat dairy ingredients that save you calories and cut the fat of the traditional version nearly in half. MORE + LESS -

Ingredients

cups reduced-fat shredded Cheddar cheese (6 ounces)
1/4
cup reduced-fat mayonnaise or salad dressing
1/4
cup fat-free sour cream

can (11 ounces) vacuum-packed whole kernel corn or whole kernel corn with red and green peppers, drained

fat-free flour tortillas (6 to 8 inches in diameter)

slices (1 ounce each) deli fully cooked ham
Cilantro sprig, if desired

    Mix cheese, mayonnaise, sour cream and corn.

    Top each tortilla with 1 slice ham. Spread 2 tablespoons corn mixture over ham. Top with cilantro. Roll up.

Expert Tips

  • Get on a roll! Soften tortillas as directed on the package for easier rolling.
  • In place of the Cheddar, another time you could use Monterey Jack or one of the newer shredded Mexican cheese blends available in most supermarkets.
