Grilled Sweet Potatoes with Chipotle-Honey Sauce

Ingredients

Chipotle-Honey Sauce

  • 1 cup honey
  • 4 chipotle chiles in adobo sauce (from 7-oz can), finely chopped
  • 2 tablespoons adobo sauce (from can of chiles)

Potatoes

  • 6 medium sweet potatoes
  • 1/3 cup olive or vegetable oil
  • 2 teaspoons kosher (coarse) salt

Steps

    Heat gas or charcoal grill. In small bowl, mix sauce ingredients; set aside.
  • 2
    Cut each sweet potato lengthwise into 4 or 5 slices; brush both sides with oil. Carefully brush additional oil on grill rack. Place potatoes on grill over medium heat; sprinkle with 1 teaspoon of the salt.

    Cover grill; cook 8 to 10 minutes, turning once and sprinkling with remaining 1 teaspoon salt, until potatoes are tender. Serve with sauce.

  • For a milder sauce, make a honey barbecue sauce with 1/2 cup honey and 1/2 cup hickory-flavored or regular barbecue sauce. Add 1/4 teaspoon ground red pepper (cayenne), if desired.
