Grilled Parmesan Potato Planks

These hearty “potato chips” get loads of flavor from grated cheese and chopped fresh herbs. MORE + LESS -

Ingredients

Baking potato, unpeeled
Olive oil
Grated Parmesan cheese
Chopped fresh cilantro
Coarsely ground pepper

    Microwave potatoes on High 3 minutes to partially cook; cool slightly. Cut potatoes lenghthwise into 1/2-inch thick slices. Toss with just enough olive oil to coat. Toss with cheese, cilantro and pepper. Place on large sheet of aluminum foil. Bring corners of foil together up over potatoes; fold open edges over to form a pouch.

    Heat coals or gas grill to medium heat. Grill about 25 minutes, turning once, until potatoes are tender.
