Grilled Lyonnaise Potatoes

Ingredients

Packaged refrigerated hash brown potatoes
Chopped Vidalia onion or other sweet onion
Chopped fresh cilantro or parsley, if desired
Olive oil
Butter or margarine
Salt
Pepper

    Place potatoes in center of large square of aluminum foil. Add onion, cilantro, olive oil and butter (about 1/2 cup chopped onion, 2 tablespoons chopped fresh cilantro, 2 tablespoons olive oil and 1 tablespoon butter to package hash brown potatoes); toss. Season with salt and pepper; fold opposite ends of foil up and over potatoes to form a pouch. Grill about 5 to 6 inches from medium coals, turning pouch once, about 25 minutes or until potatoes and onion are tender.
