Ingredients

Olive oil or butter-flavored cooking spray
Packaged refrigerated hash brown potatoes
Chopped sweet onion
Chopped fresh cilantro or parsley, if desired
Salt
Pepper

    <P>Spray large square of aluminum foil with cooking spray. Place potatoes in center of foil. Add onion cilantro (about 1/2 cup chopped onion and 2 tablespoons chopped fresh cilantro to a 20-ounce package of hash brown potatoes); toss, spraying lightly with cooking spray. Sprinkle with salt and pepper; fold opposite ends of foil up and over potatoes to form a pouch.</P> <P>Grill 5 to 6 inches from medium coals about 25 minutes, turning pouch once, or until potatoes and onion are tender.</P>
