Ingredients

  • 2 1/2 cups uncooked bow-tie (farfalle) pasta (7 oz)
  • 1 package (20 oz) lean (at least 90%) ground turkey
  • 1 small onion, chopped (1/4 cup)
  • 1/2 cup sliced ripe olives
  • 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano, undrained
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon garlic salt
  • 1/2 medium cucumber, thickly sliced, slices quartered (about 1 cup)
  • 1/2 cup crumbled feta cheese (2 oz)

Steps

    Cook and drain pasta as directed on package.

    Meanwhile, in 12-inch skillet, cook turkey and onion over medium heat 8 to 10 minutes, stirring occasionally, until onion is tender and turkey is no longer pink; drain.

    Stir in olives, tomatoes, tomato sauce, oregano, garlic salt and cucumber. Reduce heat to low. Simmer uncovered about 15 minutes, stirring occasionally, until hot. Serve over pasta; sprinkle with cheese.
