Ingredients

  • 1/2 cup ranch dressing
  • 2 tablespoons French or Catalina dressing
  • 6 boneless, skinless chicken breast halves (about 1 3/4 pounds)

    Heat coals or gas grill for direct heat. Mix dressings together. Cover and grill chicken 4 to 6 inches from medium heat 15 to 20 minutes, brushing frequently with dressing mixture and turning once, until juice of chicken is no longer pink when centers of thickest pieces are cut. Discard any remaining dressing mixture.

    Sandwich: Place grilled chicken in buns with lettuce leaves, tomatoes and mustard. Salad: Cut grilled chicken into strips. Add to romaine, and drizzle with raspberry vinaigrette or your favorite salad dressing. Light Meal: Cut grilled chicken into bite-size pieces. Mix with mayonnaise, chopped celery and onion, salt and pepper. Use as a sandwich filling, to stuff tomatoes or to cut-up fresh vegetables or fruits.
