1Heat oven to 350?F. Line cookie sheet with cooking parchment paper; spray paper with cooking spray (without flour).
2In small bowl, mix flours, xanthan gum, cream of tartar, baking powder and salt with whisk; set aside. In medium bowl, beat eggs, ghee, 3/4 cup sugar, the vanilla and vanilla bean paste. Gradually add flour mixture, beating until well blended.
3In small bowl, mix 2 tablespoons sugar and the cinnamon. Drop dough by tablespoonfuls into topping and roll to coat. Place balls on cookie sheet; flatten slightly.
4Bake 19 to 21 minutes or until golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack.
