Ingredients

lb lean (at least 80%) ground beef
1/2
cup Gluten Free Chex™ original quick cook oats

tablespoon Sriracha sauce
1/2
teaspoon salt
1/4
teaspoon pepper

small onion, chopped (1/4 cup)

    Heat oven to 400°F.
  • 2
    Line 15x10-inch pan with sides with foil, and place wire rack on top. In large bowl, mix all ingredients. Shape mixture into 30 (1 1/2-inch) meatballs. Place meatballs on rack in pan.

    Bake uncovered 15 to 20 minutes or until no longer pink in center and thermometer inserted in center reads 160°F.

  • Shape meatballs fast by using a #40 cookie scoop.
  • To turn up the heat, increase the amount of Sriracha, or for a new flavor twist, substitute harissa.
