Gluten-Free Homemade Waffles

Ingredients

cup almond milk, soymilk or regular milk

tablespoons sunflower oil or ghee (measured melted)

cup sugar

teaspoons pure vanilla
1/2
cup tapioca flour
1/2
cup white rice flour
1/2
cup sweet white sorghum flour

tablespoons garbanzo and fava flour

tablespoons potato starch flour
1/2
teaspoon gluten free baking powder
1/2
teaspoon salt
1/4
teaspoon baking soda
1
cup gluten free maple-flavored syrup

    Heat waffle maker. (Waffle makers without a nonstick coating may need to be brushed with vegetable oil.) In blender, place eggs, milk, oil, sugar and vanilla. Cover; blend until mixed. Add all flours, the baking powder, salt and baking soda. Cover; blend until well mixed.

    Pour slightly less than 1 cup batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops and waffles are browned on both sides. Carefully remove waffle. Repeat with remaining batter. Serve waffles with syrup.

Expert Tips

  • Garbanzo bean and fava flour is also called “garbanzo fava bean flour” or “garfava flour.”
  • For extra-special waffles, serve with chopped mango, fresh blueberries and raspberries. Sprinkle with powdered sugar before serving.
  • Recipe Variation Gluten Free Homemade Pancakes: To make pancakes, heat oiled griddle or skillet over high heat. Pour enough batter onto griddle to make 5-inch pancakes. Reduce heat to medium-high; cook until bubbles appear around outer edges of pancakes. Turn pancakes; cook until golden brown on both sides.
