oz semisweet baking chocolate, chopped
oz unsweetened baking chocolate, chopped
cup unsalted butter, cubed
teaspoon salt
eggs, room temperature
1 1/2
cups granulated sugar
Powdered sugar or unsweetened baking cocoa, as desired

    Heat oven to 325°F. Spray 9-inch round cake pan with cooking spray.

    Microwave chocolates and butter in large microwavable bowl uncovered on High in 1-minute increments until mixture can be stirred smooth, 3 to 4 minutes. (Or melt on stove in saucepan over low heat.)

    In another large bowl, beat eggs and granulated sugar with electric mixer 10 minutes. Mixture will lighten and become thick. Fold in chocolate mixture with large rubber spatula. Pour into pan.

    Bake about 40 minutes or until toothpick inserted in center comes out clean.

    Cool completely; remove from pan. Sprinkle generously with powdered sugar or cocoa before serving.

Expert Tips

  • The cake batter will almost completely fill a 9x2-inch round pan. As cake bakes, top will puff up over top of pan like soufflé, and top will crack slightly. This is normal and should be expected.
  • Use a springform pan for easy removal.
  • To make stencil, place fork and spoon crossed on top of cake. Sprinkle cake with powdered sugar, and then carefully remove fork and spoon.
