Easy Carrot Tzimmes

Ingredients

lb carrots, thinly sliced (3 cups)
1/2
cup water
1
medium cooking apple, peeled, coarsely chopped (1 cup)
1/4
cup honey
1
tablespoon frozen orange juice concentrate, thawed

teaspoons margarine
1/4
teaspoon salt
1/8
teaspoon pepper

    In 2 1/2-quart saucepan, heat carrots and water to boiling. Reduce heat. Cover; simmer about 5 minutes or until crisp-tender. Drain. Remove carrots from saucepan; keep warm.

    In same saucepan, mix remaining ingredients. Cook over low heat about 5 minutes, stirring occasionally, until apple is tender.

    Add carrots; stir gently to coat. Cook until thoroughly heated.

Tzimmes is versatile as well as delicious. You can use sweet potatoes in place of the carrots or toss in 1/4 cup seedless raisins or dried apricots.
