Dried Cherry, Walnut and Gorgonzola Salad

Ingredients

  • 1 tablespoon white wine vinegar
  • 2 teaspoons mayonnaise or salad dressing
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • Dash of pepper
  • 3 tablespoons olive or vegetable oil
  • 1 bag (10 ounces) romaine and leaf lettuce salad mix (about 4 cups)
  • 1/2 cup dried cherries
  • 1/2 cup crumbled Gorgonzola cheese (2 ounces)
  • 1/2 cup coarsely chopped walnuts

Steps

    Beat vinegar, mayonnaise, mustard, salt and pepper in small bowl with wire whisk until blended. Gradually beat in oil until well blended. Cover and refrigerate until serving.

    Just before serving, place lettuce in large bowl. Pour dressing over lettuce; toss. Divide lettuce among serving plates. Sprinkle with cherries, cheese and walnuts.
