Chicken-Zucchini Sheet-Pan Dinner

Ingredients

Olive oil

box (7 oz) The Good Table™ Parmesan and Herb sauce and crust mix for chicken
3
medium zucchini, sliced into rounds
3/4
lb chicken tenders, cut into chunks
Salt, pepper and red pepper flakes, if desired
1
small clove garlic
1
tablespoon chopped fresh parsley
1/2
cup plain Yoplait® Greek 100 plain yogurt
Pita breads, if desired
Sliced tomatoes, if desired

    Heat oven to 400°F. Line cookie sheet with cooking parchment paper; drizzle with olive oil.

    Mix crust mix and Parmesan cheese from box in shallow dish. Squeeze sauce from box into small bowl. Dip 1 side of each zucchini round into sauce, then dip into crust mixture. Place each round, bare side down, on cookie sheet.

    Toss chicken chunks in small bowl with a pinch each of salt, pepper and red pepper flakes. Scatter chicken between rounds of zucchini; drizzle everything with a bit more olive oil.

    Bake about 25 minutes or until chicken is cooked through and crispy topping on zucchini is golden.

    Meanwhile, finely chop garlic. Stir garlic and parsley into Greek yogurt.

    Serve chicken, crispy zucchini and yogurt sauce with pitas and tomatoes.

Expert Tips

  • For a veggie version, try subbing drained chickpeas for the chicken.
  • For a seafood version, sub peeled shrimp for the chicken.
