Ingredients

cup butter or margarine

small green bell pepper, chopped (1/2 cup)

ounces fresh mushrooms, sliced (3 ounces)

cup Gold Medal™ all-purpose flour

cups milk

cups Progresso™ chicken broth (from 32-ounce carton)

cups cut-up cooked chicken or turkey

jar (2 ounces) diced pimientos, drained

cups hot cooked rice

    Melt butter in 3-quart saucepan over medium-high heat. Cook bell pepper and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.

    Stir in flour, salt and pepper. Cook over medium heat, stirring constantly, until bubbly; remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and pimientos; cook until hot. Serve over rice.

Expert Tips

  • You can use a 4-ounce can of mushroom pieces and stems, drained, instead of the fresh mushrooms. Add the mushroom liquid with the milk in step 2 for a mightier mushroom flavor.
  • Why not turn to tuna? Tuna à la King is as easy as replacing the chicken with a 12 1/2-ounce can of drained tuna.
  • Make your chicken fit for a king! Serve it over toasted bread triangles, as shown, instead of rice.
