Bread Machine Pumpkin Spice Quick Bread

Ingredients

  • 1 cup sugar
  • 1 cup canned pumpkin
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups Gold Medal™ all-purpose flour or Better for Bread™ flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 cup chopped nuts, if desired

Steps

    Grease bread machine pan and kneading blade generously with shortening.
  • 2
    Measure carefully, placing all ingredients in bread machine pan in the order recommended by the manufacturer.

    Select Quick Bread cycle only. After 3 minutes into cycle, open lid and carefully scrape down sides of pan. Close lid to continue with cycle.
  • 4
    Cool baked bread 10 minutes. Remove from pan to wire rack, or follow manufacturer's recommendation.

  • After cooling, wrap bread tightly and store in the fridge up to a week or freeze up to 3 months.
  • Pumpkin pie spice can be used instead of the three spices in the recipe.
