Ingredients

  • 1 cup peanut butter
  • 6 tablespoons apricot preserves
  • 1 teaspoon ground mustard
  • 16 slices raisin bread
  • 4 medium unpeeled or peeled eating apples, thinly sliced
  • Salad greens, if desired

    Mix peanut butter, preserves and mustard; spread on 8 slices bread.

    Arrange apple slices and salad greens on peanut butter mixture. Top with remaining bread.

  • Golden Delicious apples naturally keep from browning after cutting, making them a good choice when adding apple slices to sandwiches.
  • Red leaf lettuce has a great color that would suit these party sandwiches perfectly.
  • Cinnamon-swirled bread used for the raisin bread can make this one snazzy sandwich!
