Beef Pita Folds

Tired of the same old sandwiches? Try pita folds with a beefy guacamole filling and the works.

Ingredients

  • 3 tablespoons sour cream
  • 1 tablespoon thick & chunky salsa
  • 1/2 cup guacamole
  • 4 pita fold breads (6 inches in diameter)
  • 2 cups shredded lettuce
  • 1 medium tomato, chopped (3/4 cup)
  • 6 ounces thinly sliced cooked roast beef
  • 3/4 cup shredded Cheddar cheese (3 ounces)

    In small bowl, mix sour cream and salsa.
  • 2
    Spread guacamole over pita fold breads. Top with lettuce, tomato and beef. Sprinkle with cheese. Top with salsa mixture.

    For all of you turkey lovers, try deli sliced turkey instead of the roast beef. You also can use Monterey Jack cheese instead of the Cheddar.

    Soften pita fold breads in the microwave for about 10 seconds to make it easier to fold them.
