Ingredients

cups all-purpose flour

teaspoon baking soda

teaspoon salt

cup sugar

cup butter, softened

eggs
1 1/2
cups mashed ripe bananas (about 3 large bananas)

cup Mountain High™ lowfat plain yoghurt

teaspoon vanilla

    Heat oven to 350°F. Spray 9x5-inch loaf pan with cooking spray.

    In medium bowl, stir flour, baking soda and salt until combined. In large bowl, beat sugar and softened butter with electric mixer on medium speed about 1 minute or until light and fluffy. Beat in eggs one at a time. Add banana, yoghurt and vanilla; beat on low speed until just combined. Beat in flour mixture on low speed until just combined. Spoon batter into loaf pan.

    Bake 1 hour 5 minutes to 1 hour 15 minutes or until toothpick inserted in center of loaf comes out clean. Cool 10 minutes in pan; remove from pan to cooling rack to cool completely, at least 1 hour 30 minutes.

Expert Tips

  • Run the back of a butter knife along the edges of the loaf pan for easier removal.
  • Stir 1/2 cup chocolate chips or chopped nuts into the batter, if desired.
