Balsamic-Mozzarella Chicken Salad

Ready in 15 minutes, this Italian-inspired salad relies on refrigerated grilled chicken and creamy fresh mozzarella.

Ingredients

  • 1 container (8 oz) small fresh mozzarella cheese balls, drained
  • 1 pint (2 cups) cherry tomatoes, cut in half
  • 1 package (10 oz) refrigerated grilled chicken breast strips
  • 1/2 cup balsamic vinaigrette dressing
  • 12 leaves romaine lettuce
  • Chopped fresh basil leaves, if desired

Steps

    In medium bowl, gently stir mozzarella, tomatoes and chicken. Drizzle with dressing; toss lightly.

    Line each of 4 plates with 3 lettuce leaves; spoon salad onto lettuce-lined plates. Garnish with basil.

  • tip 1
    Fresh mozzarella is packed in liquid and is very mild and sweet tasting. Look for small, fresh, pearl-size mozzarella balls called Perline, but if unavailable, use any size fresh mozzarella and cut into 1/2-inch pieces.

    Add 1/2 cup chopped fresh basil leaves to the salad, if desired, rather than just sprinkling some on top.
  • tip 3
    Leftover grilled chicken would be a great substitute for the purchased grilled chicken. Do a planned leftover and throw on an extra chicken breast next time you’re grilling. Slice it and freeze.
