Summer’s Go-To Weeknight Meal: Chicken Zucchini Sheet-Pan Dinner

This sheet-pan dinner is made easy with the addition of The Good Table, a fresh crop of zucchini and chicken breasts. With just a few minutes of prep this dinner is on the table and ready to enjoy.


I’m always on the hunt for easy and delicious new weeknight dinners and The Good Table is so helpful because it has everything you need to make a crisp, flavorful chicken dinner. I wanted to mix things up a bit and use The Good Table Parmesan and Herb mix on everyone’s favorite end-of-summer-crop: zucchini! And because all of that delicious (and healthy) zucchini helps to stretch out a moderate amount of chicken, this meal is totally budget-friendly. Anyone who has ever grown zucchini knows that the harvest is always plentiful and there are never enough ways to use up the bounty. Instead of just coating chicken breasts in the Parmesan and Herb mixture, we’re dipping zucchini rounds into the sauce and coating for this super flavorful dinner.

We start with just a few ingredients: zucchini, chicken tenders, salt, pepper, and of course, a box of The Good Table Parmesan and Herb.


We’re simply seasoning the chicken and saving the parm-herb mixture for topping the zucchini. Just dip one side of a zucchini round in the sauce packet provided, then follow up with the cheesy breadcrumb mixture. Place it onto a lined sheet pan and repeat!


Once all of your zucchini is coated, scatter the chicken amongst the zucchini and send it into the oven to bake!


While the chicken and zucchini bakes, stir up a quick, flavorful yogurt sauce. Greek yogurt, a bit of garlic, and some chopped parsley make a creamy, zippy, tangy sauce perfect for slathering onto pitas.


In about 30 minutes you’ll have a tasty, easy, and fun pita dinner on the table with minimal cleanup and maximum flavor!
