Pork Chops with Creamy Chive Sauce

This comforting skillet dinner’s on the table in 30 minutes, making it a weeknight go-to.

Like most moms, I have really grand plans for our family’s weeknight dinners. Menus are prepared, ingredients are purchased, but when it comes down to it, as 5 o’clock rolls around, all intentions go out the window. The house is a mess after a hectic day, the kids are fussy and adding to the mess with loads of dishes, pots and pans to clean does not sound appealing at all. 

Enter this super quick and easy one-skillet dinner. Dinner’s done in less than 30 minutes and there’s literally one pan to wash, making this dish a weeknight winner. Here’s how to do it. 

You’ll need olive oil, boneless pork chops, chicken broth, cream cheese and chives. That’s it (besides salt and pepper, of course).

Start off by adding a generous amount of salt and pepper to both sides of the pork chops.

Heat the olive oil in a pan and cook the pork chops until they are browned and cooked through. Remove to a plate and cover with foil to keep warm.

In the same pan, add the chicken stock.

Then add in the cream cheese.

Cook, whisking to combine, until the cream cheese melts and the sauce gets smooth.

Stir in the chives and dish up!
