Buffalo Chicken Meat Loaf

One of my favorite appetizers is spicy buffalo chicken wings. I crave them pretty often. But instead of indulging in fatty wings every time, I try to think of healthier recipe alternatives that include those buffalo chicken flavors I love so much.

Usually when I make any buffalo chicken dish, it’s too spicy for my son. So I always have something on hand to make for him that’s not spicy. However, the other night I thought I would try experimenting with a milder version of buffalo chicken in the form of a meat loaf in the hopes that he would be able to enjoy it, too.

For this meat loaf, I used ground chicken which is really lean. To keep the meat loaf moist, I added lots of vegetables, making it very healthy.

First, I start by finely chopping 1 cup each of celery, onion and carrot in my food processor. Then transfer the veggies to a large bowl.


Add the ground chicken and some buffalo sauce…


and an egg.


Stir in Worcestershire sauce...


and some blue cheese.


I also toss in a little garlic, bread crumbs milk, salt and pepper. Then I combine it well.


Press the mixture into a greased loaf pan. Bake for 40 to 50 minutes or until the internal temperature is about 165°


I glaze the meat loaf again with more wing sauce. For my son, I cut off a few slices that aren’t drenched in buffalo sauce. He loved it! I was so glad he could finally enjoy a buffalo chicken dinner that wasn’t too spicy.
