How to Make Key Lime Magic Bars

Creamy key lime yogurt, white chocolate chips and shredded coconut on a graham cracker crust make these bars a light and sweet, irresistible treat.
Key Lime Magic Bars

Magic bars taste, well, magical. Typically made from layers of buttery graham crackers, coconut and chocolate chips and bound together by sweetened condensed milk, these squares are over-the-top sweet and totally irresistible.

So, I set out to create a lighter but equally delicious twist on magic bars and came up with this tasty key lime version. This crumbly treat gets a lighter, tangy taste with some help from Greek 100 Key lime yogurt, lime zest and juice, but has just enough sweetness to satisfy your sweet tooth with some a graham cracker crust, white chocolate chips and shredded coconut.

First, preheat your oven to 350°F and line an 8-inch square pan with parchment paper and spray with cooking spray. Next, combine the ingredients for the graham cracker crust in a small bowl: graham cracker crumbs, oats, sugar and a dash of salt plus some melted coconut oil to bind it all together.


Press the crust mixture evenly into the bottom of the pan. You can use your hands for this step, but I like to use the flat bottom of a ramekin or glass to really pat it down for an even bake and solid foundation.


Next, in a medium bowl, combine the condensed milk, yogurt, lime peel and lime juice with a whisk. Stir in the coconut and white chocolate chips.


Now, simply spread the mixture evenly over the graham cracker crust and bake!


Bake for 20 to 25 minutes, or until the bars are just set and golden around the edges. Cool them completely on a cooling rack for about an hour before serving.
