I love making sweet quick breads. Banana...pumpkin...cinnamon. You name it, I make it! Sweet breads are great treat for any time of day. One of my favorite pairings is blueberry and lemon because the sweet-tart flavor combination works so well.
This bread makes a delicious dessert, but I also love it in the morning with my coffee or in the afternoon with tea. Starting with wholesome ingredients, the super-easy recipe can be made in very little time. It also keeps well. I leave it covered on the counter so that my family can easily help themselves whenever they want.
Whenever I make baked goods with blueberries, I usually fold in most of the berries and then save a few for the top. (I also sometimes sprinkle the berries with a little flour before I fold them into the batter because people say it helps them stay in place.) No matter how you like to do it, it tastes great in the end (even if the berries do fall to the bottom)!
