Carrot cake is a dessert that most of us love but few of us make because it seems difficult. The truth is that you can start with Betty Crocker® Super Moist® carrot cake mix and add in lots of simple flavors and textures to make a great cake in very little time.

When I crave this dessert, I like to bake carrot cake cupcakes instead of a whole cake. I sometimes make them plain or jazz them up with nuts, pineapple, coconut and other yummy treats. It’s never boring and always delicious.

The combinations are up to you. I always keep a few boxes of Betty Crocker® cake mix, frostings and toppings in my pantry, so I can whip up a dessert in a pinch.

To enhance the flavor of the cake, I usually pick two or three extra ingredients from the list below and add them to the cake batter. Sometimes, I even divide the batter into two separate bowls and mix in different ingredients into each batter bowl for two batches of varying flavors. Below are the items I think work well in any combination, but feel free to stir in anything you like.

  • 1 can (8 oz) crushed pineapple in juice, undrained
  • 1/2 cup chopped nuts, like walnuts or pecans
  • 1/2 cup raisins
  • 1/2 cup shredded sweetened coconut
  • 1/2 cup dark chocolate chips

The beauty about preparing cupcakes is that you can be flexible and make a wide variety of flavors with just one batter.

To start, simply prepare Betty Crocker® carrot cake mix according to the directions on the box.

You can then decide if you want to add anything into the mix. If you do, just simply fold in the extra ingredients before you fill your cupcake cups and bake.

Once the cupcakes are baked and cooled, you can frost them with Betty Crocker® Rich & Creamy cream cheese frosting.

Making cupcakes is a great way to get the kids in the kitchen, too. They can add their favorite ingredients or toppings. Just put out a few bowls with the different toppings and let them get creative.
