Sponge cake recipe?

Thank you for visiting Ask Betty.  Here is a Fluffy Sponge Cake recipe that I know you are going to love.  Happy baking!  


Fluffy Sponge Cake

 

 

1 1/2 cups Gold Medal® flour* or cake flour

1 teaspoon baking powder

1/2 teaspoon salt

6 egg yolks (about 1/2 cup)

1 1/2 cups sugar

1/3 cup cold water

2 teaspoons vanilla

1 teaspoon lemon extract

1 teaspoon grated lemon peel, if desired

6 egg whites (3/4 cup)

1/2 teaspoon cream of tartar

 

 

Heat oven to 325°.  Blend flour, baking powder and salt; set aside.  In small mixer bowl, beat egg yolks until very thick and lemon colored, about 5 minutes.  Pour yolks into large bowl and beat in sugar gradually.  On low speed, beat in flour mixture alternately with water, flavorings and lemon peel.  In large mixer bowl, beat egg whites and cream of tartar until stiff. Gently fold egg yolk mixture gradually into egg whites.  Pour into ungreased tube pan, 10x4 inches.  Bake 60 to 65 minutes.  Invert pan on funnel; let hang until cake is cold.

 

 

*If using self-rising flour, omit baking powder.
