I had the old fashioned cookbook for years and lost it. im looking for the sponge cake recipe on page 154.

Hi,

 

We have had many recipes for Sponge cake through out the years.  Here is one from an older cookbook.  Hope it what you are looking for.

 

Hot Water Sponge Cake

 

3 eggs

3/4 cup sugar

1/3 cup hot water or hot milk

1 teaspoon vanilla

1/2 teaspoon lemon extract

1 1/4 cups cake flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

 

Heat oven to 350 degrees. Grease and flour 8 or 9-inch square pan.  Beat eggs in small mixer bowl on high speed 5 minutes; pour into large mixer bowl.  beat in sugar gradually.  Beat in water, vanilla and lemon extract on low speed.  Beat in flour, baking powder and salt on low speed; beat just until batter is smooth.  Pour into pan. 

 

Bake until top springs back when touched lightly in center, 25 to 30 minutes; cool.  Serve with Sweetened Whipped Cream and if desired, whole or sliced strawberries.
