I made this oven pancake this AM in a cast iron skillet- it came out as pictured! Easy and delicious! I took it out of the oven at about 10 minutes. Maybe the cast iron cooks hotter. It was delish with strawberries and my husband had his with maple syrup.I plan on making this next weekend for guests!

It would have been nice if you could include the amounts of the ingredients, also, I always like to use butter on the pancake and sprinkle with the powder sugar and squeeze some lemon juice on it

Our family makes a similar vesion of this baked pancake called a "DUTCH BABY OR MAMA" if you make a larger one. We used it because of of my children did not like to 'eat' eggs and this called for a higher ratio or hidden eggs. She was the one that always requested it and it wasn't until she was older and began to help make her favorite recipes and was so surprised that she'liked' eggs! Ours' is heavily (or lightly) dusted with cinnamon and sugar instead of the fruit(it was thrifty).
