Emergency Substitutions

If you must make a substitution for a recommended ingredient, try the following:

Instead of: Amount Use:
Arborio rice 1 cup uncooked 1 cup uncooked short-grain white rice, regular long-grain rice or brown rice
Baking powder 1 tsp 1/4 tsp baking soda plus 1/2 tsp cream of tartar
Balsamic vinegar 1 Tbsp 1 Tbsp sherry or cider vinegar
Beer 1 cup 1 cup nonalcoholic beer, apple cider or beef broth
Bread crumbs, dry 1/4 cup 1/4 cup finely crushed cracker crumbs, corn flakes or quick-cooking or old-fashioned oats
Broth, chicken, beef or vegetable
1 cup 1 tsp chicken, beef or vegetable bouillon granules (or 1 cube) dissolved in 1 cup boiling water
Brown sugar, packed
1 cup
1 cup granulated sugar mixed with 2 Tbsp molasses or dark corn syrup
Buttermilk or sour milk 1 cup 1 Tbsp lemon juice or white vinegar plus enough milk to make 1 cup; let stand a few minutes. Or 1 cup plain yogurt.

my comment is there a section of - what quanaity amount can I add of other ingredients such as dried fruit or dry oatmeal oats to your cookie and cake mixes?

I am interested in making fruit smoothies but most recipes call for yogurt and I notice that the sour cream is a substitute for yogurt and visa versa - is there another alternative that I can use since I am allergic to both and can't eat them without getting sick.

Instead of using milk can I just use water without the evaporated milk? It is for muffins.

My husband does not like onions cooked in a recipe. Will eat them raw on a sandwich only. Is there a herb subsitute for the flavor of onion.

jmsc asked if there was a recipe for Bisquick, and i found one! In Top Secret Recipes: 8 cups flour, 1 1/4 cups nonfat dry milk powder, 1/4 cup baking powder, 1 Tablespoon salt, 2 cups shortening. Combine in a very large bowl. Cut in shortening until it resembles coarse cornmeal. Store in tightly closed covered container in a cool place. Makes about 10 cups.

I have a box of Betty Crocker yellow cake mix that calls for 1/3 butter, however, I don't have enough butter. Can I sub oil for the butter and if so, how much oil can I use?
