Great Steak, On the Cheap

This easy recipe comes together in a flash and tastes like a million bucks. But it’s as easy on the budget as it is on the cook.
Some folks think eating steak is living too high on the hog. If you’re on a hamburger budget, don’t fret. A good sirloin cut can be plenty affordable. Look for top sirloin steak, a boneless cut that is quite flavorful. Like any meat, it's important not to overcook it. Use a thermometer to gauge the temperature.

The sirloin comes from behind the loin and is a good thick cut. I like to sear it in a hot pan first and then pop it in a hot oven to finish things off. This technique is great for any kind of steak but works beautifully with the less expensive top sirloin cuts. |

To get a great pan sauce, drizzle balsamic vinegar or wine in the pan after the steak is removed and simply warm it until it’s slightly reduced. Then use this to finish the plate. |

If you’re pressed for time, roasted red peppers and marinated onions from your grocer's salad bar and some crusty bread are a quick way to complete the meal. |
