Mini Buffalo Chicken Bisquick Pizzas

Using Bisquick is the quick and easy way to make individual buffalo chicken pizzas. How great is that?

I used to be terrified of making pizza at home. It wasn’t the actual pizza that scared me but the crust. Working with yeast can be a scary thing sometimes.

I am now over that fear and love to make homemade pizza. But when I was in that “scared” stage, I found the most wonderful way to make pizza–using Bisquick for the crust. No need for yeast, no need for waiting. A delicious pizza was mine with very little effort!

Since discovering this easy pizza crust, I have tried it with many toppings. And this is one of my favorites. When I am trying to please a crowd, I can almost always turn to buffalo chicken. Something about the spicy sauce and cooling effect of the blue cheese seems to be a crowd-pleaser. Topping these easy pizza crusts with this magical combination of flavors is a favorite of ours. And I love making anything mini. These are perfect if you are entertaining, especially a group of kids or teenagers.

I also keep extra Monterey Jack on hand because not everyone is a blue cheese fan. You can customize each individual pizza for each person, and everyone is happy!

You will need Original Bisquick mix, warm water, olive oil, shredded Monterey Jack cheese, cooked shredded chicken, buffalo sauce, melted butter and blue cheese. You will also need some green onions to garnish when the pizzas are done.

First, you will combine the Bisquick, warm water and olive oil. Turn it out onto your work surface. It will still be a little crumbly at this point.

Knead it all together until it forms a ball of dough.

Cut the dough into 4 equal pieces. You could go even smaller, but I thought these made great individual-size pizzas.

Flatten each ball of dough into a round and place on a baking sheet that has been sprayed with cooking spray. Bake them until they are just lightly golden brown.

While the crusts are cooking, combine the chicken, buffalo sauce and melted butter.

When the crusts are done, divide the Monterey Jack evenly between the crusts.

Top them with the buffalo chicken.

And then top them with the blue cheese. Return to the oven just until the cheese has melted.

Serve the pizzas topped with sliced green onions.
