These hearty, do-ahead breakfast burritos are easy and will make camping mornings more special!
I’ve always been a part of a camping family. Growing up, most of my family’s vacations consisted of driving into the mountains in Colorado. Today, my husband and I look forward to spending lots of time with our kids camping in Utah.
As a kid, camping meals, like tin foil dinners and taco salad, were some of my favorite foods. Now that I’m the mom and the one who is usually planning and cooking the food, I look for things that are not only delicious (especially when cooked over an open fire!) but that are easy to prepare. These breakfast burritos are a cinch because all the work is done ahead of time. That means I can sleep in a few more minutes while my husband gets up to make a fire!
Here’s how you make them. You start off with bulk breakfast sausage, eggs, canned green chiles, shredded cheese and tortillas.
In a 12-inch skillet, brown the sausage until it is cooked through.
While the sausage is cooking, whisk together your eggs just to combine them.
When the sausage is cooked, add in the eggs; stir to combine.
When the eggs are partially cooked but still liquid, stir in the green chiles.
Cook the eggs, stirring until set. When the eggs are done, stir in the cheese.
Warm up the tortillas so they are pliable. Place one shell in the center of a piece of foil. Spoon some of the egg and sausage mixture down the center of the tortilla.
Fold in the ends of the tortilla, and then roll it up into a burrito.
Wrap the burrito in foil. Be generous with the foil, double wrapping if needed.
Place the wrapped burritos in a resealable plastic bag; place in an ice-filled cooler or in the refrigerator until ready to heat and eat.
To warm up the burritos, place them in hot coals next to a fire. Let them cook for 10 to 15 minutes or until heated through. The time will depend on how hot your fire and coals are.
The burritos can be chilled for a couple of days. So you can enjoy them your whole camping weekend!
