If you’ve always thought that apple crisp was just for dessert, think again! Apple crisp filled crepes make the perfect breakfast.
I was pretty late to jump on board the crepe train. In fact, the first time I ever made crepes was in the Betty Crocker kitchens a few years ago—using Bisquick! I was amazed at how easy they actually were to make, and they’ve been part of my brunch repertoire ever since. My family loves them, and my husband’s face lights up whenever he hears that I’m making crepes.
Most of the time, we go with simple fillings, like fresh fruit and whipped cream. But sometimes, I want to try something new. These Apple Crisp Crepes are so easy—and they give you a reason to have apple crisp for breakfast! The filling comes together quickly, and only takes five minutes to cook in the microwave. You can easily be working on the filling while you are making the crepes. Top the whole thing off with some Yoplait yogurt and breakfast is ready!
You will need Bisquick, milk, eggs, apples, lemon juice, brown sugar, cinnamon, oats and some Yoplait yogurt for serving.
You’ll start by mixing the Bisquick, milk and eggs together.
Spray a 6 to 7-inch skillet with nonstick cooking spray. Add about 2 tablespoons of the crepe batter and swirl to coat the bottom of the skillet. It will be thin, don’t worry!
When the edges of the crepe turn golden brown and the middle is bubbly, use a spatula to gently flip the crepe. Cook until golden on the second side, then remove to a plate. Cover with a towel to keep warm.
While you are cooking the crepes, prepare the filling. Chop the apples into bite-sized pieces. I keep the skin on because I like the texture, but feel free to peel the apples if you don’t like the skins.
In a microwave safe bowl, mix the apples, lemon juice, brown sugar, cinnamon and oats. Microwave for 5 minutes, stirring halfway through.
While the apples are cooking, finish up the crepes.
When everything is done cooking, assemble the crepes. Place a crepe on a plate.
Place a couple tablespoons of the filling down the middle of the crepe.
Then roll it up and place it on the plate, seam side down.
Serve the crepes topped with the Yoplait® yogurt and sprinkled with a little bit of extra cinnamon. This is a breakfast your family will love!
