This isn’t your Grandma’s banana bread. Gone are the days when you have to wait an hour for a loaf of rich, dense banana bread to come out of the oven. I’ve replaced that time-consuming recipe with a foolproof banana bread mix from Betty.

Not only did I shorten the prep time by turning to a can’t-miss mix, but I cut the bake time by saying goodbye to the loaf pan and hello to muffin tins! They’re the perfect portion size and are so easy to grab and go if you’re in a rush in the morning. (And to be honest, I’m always in a rush in the mornings.) But even though we may be running a little behind, I understand the importance of eating breakfast.
I’ve also given the traditional idea of banana bread a twist by adding a smidge of chocolate. Chocolate Banana Bread Muffins. Who wouldn’t want one or two of those to start their day?
