New potatoes appear in trendy restaurants and gourmet recipes, so what are they? They’re simply young potatoes that haven’t had time to convert their sugar fully into starch, so they have a crisp, waxy texture and an extra-thin skin. Choose potatoes of similar size for even cooking success.
How to Buy
Choose nicely shaped, smooth, firm potatoes with unblemished skins (some are very delicate). Choose potatoes of similar size, about 1 1/2 inches in diameter.
How to Prepare
Scrub potatoes.
How to Cook Conventionally
Boil: Place in 2-quart saucepan. Add water just to cover. Heat to boiling; reduce heat to low. Boil gently (simmer) covered 15 to 20 minutes or until tender.
Steam: Covered 18 to 22 minutes or until tender.
How to Microwave
Place in 1 1/2-quart microwavable casserole; add 1/4 cup water. Cover. Microwave 9 to 11 minutes, stirring once, until tender. Let stand 5 minutes.
