Crushed dried corn kernels that can be yellow, white or blue, depending on the variety of corn used. Cornmeal is available in degerminated and whole-grain forms. As degerminated indicates, the germ and bran have been removed; this type is widely available at grocery stores. Stone-ground whole-grain cornmeal can be found at co-ops and health food stores; it contains the germ and the bran, which give it more flavor, texture and fiber.
