dkhussey It took mr a while to find the CLASSROOM key too. Can you brine the chicken and then take it out of the brine and freeze it? 6:33 PM

Lynn I have found that it works best to bake and eat the chicken right away, freezing any leftovers 6:36 PM

terabithia21 how can i tell when the boneless breasts are done - i always have trouble and end up too dry 6:26 PM

Ann The brining will be help with prevent dry chicken. Make sure not to overcook. Use medium-high heat to cook boneless skinless chicken breasts. Avoid cooking over low or medium heat because the juices will be drawn to the surface before the chicken browns. 6:35 PM

Kim If you use water, it will be a moist tender chicken. If you want to add something like apple juice, that will give a nice fruity note. 6:19 PM

Kim Are you referring to tomatillo's? They look like a small green tomato with a parchment like husk. They can be found in major grocery stores or hispanic markets. 6:12 PM

Diane There was onion and garlic in the frying pan;we cooked the onion and garlic until it was tender. 6:20 PM

Kim No, becasue the salt and water ratio is critical optimum flavor and moisture. You can cut back on the salt in the rub. 6:09 PM

bamagrandma I am a little concerned about the salt content because of high blood pressure issues. Will it affect the outcome to cut down on the salt? 6:10 PM

Jennifer If you leave the salt out of the brine you won't get juicy chicken. The brine is drained off, so most of the salt is drained off, too. If you are concerned about salt, leave the salt out of the rub. 6:17 PM

mainemom24 is it necessary to brine AND put a rub on the chicken 6:09 PM

Diane You don't have to use both the brine and the rub. You can just brine or just do the rub. I like it with both though! 6:17 PM

Ann You can add the rub both under and on top of the skin, it will add more flavor. 6:14 PM

KrazyJoe Do you recommend beer brining over the classic beer can chicken? If so, why? 6:10 PM

Lynn They both make really moist chicken, I love chicken made both ways 6:14 PM

Lynn It does not add to the calories, just adds flavor. 6:13 PM

kannwilson I live in a rural area. Is there a substitute I can use if Panko is not available? How is it different from regular bread crumbs? 6:10 PM

Kim Panko is coarser and crispier than regular bread crumbs. You can us regular breads or try crushed up crackers. 6:04 PM

Diane There are 2 cups water and 2 cans of beer. 6:11 PM

Diane It's not a low fat recipe. You could reduce the oil; also the breast is lower in fat. 6:09 PM

Lynn No, you can just use a rub if you'd like, but if you brine you'll have more flavor and moistness. 6:09 PM

Although I am an accomplished cook and baker I am always looking for new recipes & ideas. These classes are brilliant. You show how easy it is to create a lovely, yet easy meal and have fun doing it.
