I changed up this recipe using some of the helpful hints from others I've picked up from a couple of different recipes. I used the yellow cake mix, added a can of drained crushed pineapple. I also used 3 cupes of shredded zucchini. We all loved it! Next time, I will add a little of the juice from the pineapple as I think that will help and make it a little sweeter, too.

Very moist cake! Would be good even with traditional frosting and omitting the streusel topping.

Great cake at my luncheon. I exchanged butter for unsweetened apple sauce which cut fat cont., yet still sprayed dish. I can't have eggs so exchanged egg w/egg substitute & little more water. Everyone wanted recipe. I did omit nuts for brown sugar & oatmeal mixture apply when hot. I also would like more GF receipts.

This cam out amazing!!!! I added almost 2 cups of the zucchini and you still could not detech it. My cake came out so rich and moist; I did omit the nuts on the top but added some fresh black berries and a little scoop of canoli gelato (gf) on the side. I recently had to go gluten free and I am really enjoying the different recipes.

The taste was very good; the top coating was excellent. The zucchini was undetectable for those who aren't vegetable lovers but perhaps it needed more as it was dry-tasting. I would not make it again without doing something to add more moisture.

Thought this cake was great. I like to put fruits or veggies into desserts to make them a bit healthier. This cake was very moist, like a non-GF cake. My husband and daughter do not like zucchini and both of them loved the cake. Definitely a keeper. Thanks Betty Crocker for the recipes - keep them coming!
