Zucchini Bars

Here's another baking classic that belongs in everyone's recipe box. A clove-scented homemade frosting makes a good thing even better!

Ingredients

Bars

cup packed brown sugar
1/4
cup butter or margarine, softened
1/2
teaspoon vanilla

egg
1
cup Gold Medal® all-purpose flour
1
teaspoon baking soda
1/2
teaspoon ground cinnamon
1/2
teaspoon ground cloves
1
cup shredded zucchini, drained
1/2
cup chopped nuts

Spice Frosting

3/4
cup powdered sugar
1
tablespoon butter or margarine, softened
1/8
teaspoon ground cloves
3
to 4 teaspoons milk

Directions

  • 1 Heat oven to 350°F. Grease bottom and sides of 9- or 8-inch square pan. In large bowl, mix brown sugar, butter, vanilla and egg. Stir in flour, baking soda, cinnamon and 1/2 teaspoon cloves. Stir in zucchini and nuts. Spread in pan.
  • 2 Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • 3 In medium bowl, mix all frosting ingredients until smooth and spreadable. Spread frosting over bars. For bars, cut into 6 rows by 4 rows.

OMG! These were so good. It made an 8x8 dish and it was gone in one day by 3 people. It reminded me of a spice or apple cake it make. Totally different taste than the usual zucchini bread recipes. I could see maybe adding baking raisins next time

I added an extra egg and 1/4c oil, then reduced the cooking time to 20min. To make it "adult" I soaked 1c of raisins in rum and also added it to the batter. I doubled the icing and the bars turned out FANTASTIC and SUPER MOIST!

I was dissappointed with the recipe as the bars were dry and I baked them 5 minutes less than called for. The frosting was not enough, so I had to double it to make it stretch across the bars. Did anyone else have this problem?
