Ingredients

cups thinly sliced unpeeled zucchini (4 small)

cup Original Bisquick® mix
1/2
cup finely chopped onion
1/2
cup grated Parmesan cheese
2
tablespoons chopped fresh parsley
1/2
teaspoon salt
1/2
teaspoon seasoned salt
1/2
teaspoon dried marjoram or oregano leaves
1/8
teaspoon pepper
1
garlic clove, finely chopped
1/2
cup vegetable oil
4
eggs, slightly beaten

Directions

  • 1 Heat oven to 350ºF. Grease bottom and sides of rectangular pan, 13x9x2 inches.
  • 2 Stir together all ingredients. Spread in pan.
  • 3 Bake about 25 minutes or until golden brown. Cut into 2-inch squares; cut squares diagonally in half into triangles.

I made these for a baby shower, they were really popular & so many people asked me for the recipe! Very easy to make and can be served warm or room temperture. Delish!

I'd also like to add that I agree with a few of the other reviews, that this was too "quichey". This might be decent if you leave out the egg and the oil and add a sharper taste to it, like shredded sharp cheddar, more garlic, etc. I've been looking forward to making these ever since I found the recipe and it just doesn't deliver that "wow" factor.

These were just "ok". Actually quite bland, despite all of the seasonings. The only thing I did differently was I used chopped fresh chives in place of the parsley. Bit it still needs something. Oh, one more thing I did differently, I left out the oil. I didn't think it needed it because once you add the beaten eggs, it's plenty moist enough. In fact I had to add a little more Bisquick to the mix because it was *too* moist. I love zucchini, but doubt I'll make these again.
