I made these for a baby shower, they were really popular & so many people asked me for the recipe! Very easy to make and can be served warm or room temperture. Delish!

I'd also like to add that I agree with a few of the other reviews, that this was too "quichey". This might be decent if you leave out the egg and the oil and add a sharper taste to it, like shredded sharp cheddar, more garlic, etc. I've been looking forward to making these ever since I found the recipe and it just doesn't deliver that "wow" factor.

These were just "ok". Actually quite bland, despite all of the seasonings. The only thing I did differently was I used chopped fresh chives in place of the parsley. Bit it still needs something. Oh, one more thing I did differently, I left out the oil. I didn't think it needed it because once you add the beaten eggs, it's plenty moist enough. In fact I had to add a little more Bisquick to the mix because it was *too* moist. I love zucchini, but doubt I'll make these again.

Always a great appetizer! I used GLUTEN FREE Bisquick..no one ever knew the difference. Added a little garlic powder along with the fresh garlic. Also, I cut the zucchini lengthwise and sliced it little thicker than most reviewers. Seemed to make them hold together as finger food.

I use the shredded also; yes, to hide it from the little ones. This works equally well with egg substitute. We all have the special needs in our families. This covers a lot of diets.

I have been making these for 20 years and every time they are the first to go! Tasty way to get kids to eat veggies!! I shred the zucchini, so it is less noticable. You wont be sorry you tried them!!

Love this recipe and so does my family. I am always asked to bring this to a party or family get-together. I just add garlic powder instead of sliced garlic and follow the recipe exactly. You will love these.
